Lemonberry Loaf

This is a mild sweet bread, very good can be made with whole wheat flour or more whole grain flours to get more nutrition from it.
We change it a lot too, the original recipe was with blueberries and lemon zest, I would always add the zest if I had it on hand, but concentrated lemon juice from the bottle works great in the recipe if you dont have lemons at home.


1 and a 2/3 cup white rice gf flour blend with xangthan gum added
1/3 cup oatmeal
1/2 tsp salt 
1 Tbsp baking powder
2/3 cup hazelnut milk .. or any other non dairy milk
3 Tbsp lemon juice fresh or bottled
1/4 cup light olive oil or oil of choice
2 Tbsp applesauce
1/4 cup or less of raw honey
1 tsp vanilla or rum
add desired blueberries and smashed raspberries

bake at 350 for 50 mins in sprayed loaf pan

Put liquids/wet ingredients in a large bowl and stir well and let sit for a couple mins. Then add dry ingredients and mix together till combined, i wouldnt over mix.. will probably make the bread loaf shorter. Then add berries. and put in loaf pan. 

It is a good simple recipe I can throw it together in 10 mins while the oven is heating

Finally WAFFLES!

Stella's diet changed again in November, and it has been a CHALLANGE, I will have to blog on what it is another time, but here is finally a GOOD Vegan and Gluten Free, Wholesome Recipe.


I revamped this recipe from one I found on Pinerest
Stella' Waffles

3/4 cup ground oatmeal or oat flour
3/4 cup brown rice flour
1 and 1/2 cup white rice blend gf flour with xangthan gum added
2 Tbsp baking powder
1/2 tsp salt
1 to 2 Tbsp raw honey
1 and 1/2 cup hazelnut milk or other non dairy milk
1 and 1/2 cup roomtemp water
1/3 cup orange juice
1/3 cup oil of choice
1 tsp vanilla or i like to use rum or ginger whiskey

Have waffle iron heated to medium, cook for longer than you would think, dont cook on high.
I spray mine with cooking spray, you can brush oil on, less is more, you dont need a lot at all, a very little. spread batter out in waffle iron dont just plop in or it may turn out to be undone in the middle.

I mix all the dry things together first and put a well in the middle and add everything else and stir together with a whisk, it gets a smooth  yet fluffy consistency. this is when you can add fruit or other things to the waffle batter we like to use Enjoy life allergy free mini chocolate chips. sometimes I add flax meal just cause its good for ya,

I used the last of my honey jar on the waffles so I made a chai latte in the jar! yum! with the hazelnut milk!

Banana Walnut Chia Muffins


3 Bananas (can be ripe or yellow)
1/4 cup olive oil
1/4 cup apple sauce
1/4 cup raw honey (can be less if you dont want them too sweet)
Flax style egg - a little less than a 1/4 cup flax meal filling the rest with warm water.
(let flax egg sit for a while, will be like a jelly constancy when you add it in)
1 teaspoon vanilla
1 and a half teaspoon baking soda
1/2 teaspoon sea salt (can be less)
1/3 cup GF flour mix (Cooqi, Better Batter, Pillsbury, Bob's Redmill, etc)
1/3 cup buckwheat flour (naturally gluten free)
1/3 cup gluten free oats
1/3 cup chia seeds
1/4 to 1/3 cup walnuts
and a small amount of allergen free chocolate chips if you so desire.

I mix the Bananas, oil, apple sauce, honey and vanilla first, than i throw everything else in except the walnuts and chocolate mix and add those last.

baked at 350 for 15ish minutes, check with a toothpick


Stella can't have Banana's right now so I made them while she was at Grandpa and Grandmas over the weekend. SO I have muffins for ME, also I made an un measured ingredients version for work on Friday and the girls at work loved them! I like how life without sugar can still be sweet!

Chocolate Zucchini Muffins


  • 1 cup Cooqi Gluten Free All Purpose Flour
  • ¼ cup Flax Meal
  • ¼ cup Buckwheat Flour (buckwheat is gluten free)
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons extra virgin olive oil
  • ¼ cup coconut sugar
  • 1 Tablespoon raw honey
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup shredded zucchini (about 1 medium, squeeze all water out)
  • 1/3 cup unsweetened applesauce
  • ½ cup coconut milk
  • ½ cup regular or mini enjoy life allergy free chocolate chips

Combine all dry ingredients in a bowl

In mixer bowl combine all other ingredients, zucchini second to last and then chocolate chips.

bake at 350 for about 15 minutes, check with a toothpick, I am not great at setting a timer so that is an approximate time. I measure a 1/4 of a cup per muffin. Spray pan with oil, if using muffins liners lightly spray those too. 


Stella is Sensitive

My Daughter Stella, has challenged my baking abilities, she has challenged my thinking and changed my way of eating,

SO far.. Stella is sensitive to : Gluten, dairy, corn syrup, high fructose corn syrup, dextrose, almonds, strawberries, yeast and sugar.
Because she has too much yeast in her body right now, her digestion isn't firing on all cylinders. Sugar and sugary things feed yeast. so for now she also can't have : grapes, melon, beets and over ripe bananas..also nothing pickled, no canned veggies or fruits, beans, fermented meat like ham, nitrate bacon, sausage, hot dogs and lunch meat.. also pure maple syrup and doing our best to stay away from starchy veggies.

So as you can see.. it isnt an easy task. But it is my challange, And I believe I am somehow succeeding at it.
