- 1 cup Cooqi Gluten Free All Purpose Flour
- ¼ cup Flax Meal
- ¼ cup Buckwheat Flour (buckwheat is gluten free)
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 tablespoons extra virgin olive oil
- ¼ cup coconut sugar
- 1 Tablespoon raw honey
- 1 teaspoon vanilla
- 2 eggs
- 1 cup shredded zucchini (about 1 medium, squeeze all water out)
- 1/3 cup unsweetened applesauce
- ½ cup coconut milk
- ½ cup regular or mini enjoy life allergy free chocolate chips
Combine all dry ingredients in a bowl
In mixer bowl combine all other ingredients, zucchini second to last and then chocolate chips.
bake at 350 for about 15 minutes, check with a toothpick, I am not great at setting a timer so that is an approximate time. I measure a 1/4 of a cup per muffin. Spray pan with oil, if using muffins liners lightly spray those too.
